Dallay Khorsani: The Fiery Floral Pepper of Sikkim
Dallay Khorsani is Sikkim’s famous round red chilli. Small, deeply coloured and intensely aromatic, it is a beloved part of the region’s food culture and a familiar sight at Sikkimese meals.
Why Dallay is different
Unlike the long, tapering chillies most commonly grown across India, Dallay chillies are small and globular. Their heat is considered aromatic and slightly fruity rather than merely sharp, which is exactly why they are so loved as an accompaniment to, rather than a seasoning for, a meal.
How they are used
In the region they are enjoyed alongside rice, momos, dal and curries. Traditionally, whole chillies are also preserved, often steeped in oil and salt so that they keep for months and develop a mellowed, rounded heat.
